Black pepper is the fruit of the plant with the Latin name piper nigrum. The fruits are harvested while still green, immature, dried until they shrink and acquire a brown-black color. Black pepper has a pungent flavor. The major countries producing black pepper are India (Malabar pepper and Tellicherry), Indonesia (pepper Lampong), Brazil and Malaysia. Black pepper is widely used in most foods, meats, fish, sauces, salad dressings and spice mixtures.
